1 cup shortening 2 teaspoons baking powder
2 cups sugar 2 teaspoons baking soda
2 eggs 1 teaspoon salt
2 cups peeled and grated zucchini 2 teaspoons vanilla
1 cup chopped nuts (optional) 2 teaspoons nutmeg
2 cups raisins or chocolate chips 2 teaspoons cinnamon
(I like carob chips in this)
5 cups flour (part whole wheat)
Cream sugar and shortening; mix in eggs. Add remaining ingredients. Drop by spoonfuls onto greased cookie sheet. Bake at 375 degrees for 10-12 minutes. Makes 8 dozen. Freezes well.
