Kielbasa Potato Stir-fry

This has become a family favorite dinner.  Chris has been working 85+ hours this week so has been missing out on dinner with us.  When I told him this is what we had last night he was highly disappointed.  It’s a good one – try it!

Kielbasa Potato Stir-fry

4 med. new red potatoes, cut into 1/4″ slices
1 pkg. Kielbasa, sliced into 1″ pieces
1 med. green pepper, cut into 1″ pieces
1 small onion, cut
4 Tbsp. soy sauce
2 Tbsp. orange juice
1 tsp. dried basil
1/4 tsp. pepper

Heat oil, add potatoes, cover.  Cook 5-7 minutes or until
crisp-tender, stirring occasionally.  Add kielbasa, pepper, and onion.

Cook 6-8 minutes or until kielbasa is hot and veggies are
crisp-tender.  Add all remaining and stir to combine.

I usually serve it with white rice.
