Now that it is winter time we love having soups. While we were at my mom’s house for Thanksgiving she served a soup called “Hoagie Poagie.” I have made it before but not too often. Caleb couldn’t stop talking about this “Hoagie Poagie”; ‘It is SO good – we have to have this at home, Mom!’ So, like a good mother, I put it on the menu when we got home.
The name of the soup is a little different and Emma had a hard time remembering it during her prayer over the meal. I almost started laughing – “Please bless the ‘hokey pokey’. . . . ‘roly poly’ . . . . whatever it is.”
So, if you’re looking for a new EASY soup recipe, here you go! I would say it’s a cross between vegetable soup and chili/taco soup.
(aka 3-2-1 Stew)
1 1/2 lbs. ground beef
1 small onion, chopped
3 cans Campbells’s Minestrone soup, with 2 cans water
(or 3 cans Progresso Minestrone soup and no water)
2 cans ranch-style beans (I use pork and beans)
1 can chopped Rotel tomatoes (I use diced tomatoes)
Brown ground beef and onion. Drain and place in slow cooker. Add soup and water, beans, and tomatoes. Add a little bit more water for desired consistency. Cook in slow cooker for 2 hours on HIGH or 5-6 hours on LOW.
No further seasoning is needed. But, if you want a really zingy flavor, try using the HOT Rotel tomatoes. Can be served over rice, as well.
