This hasn’t ever been a big holiday for me, although I admit I have some Irish heritage and want to do better about making more of it. So, we took things slow and had some fun with food.
Yesterday the younger girls and I made some rainbow cupcakes.

Of course, we had to sample a few to make sure they turned out well. Um, yep – they were delicious!

For dinner tonight I had planned to make some Irish Fare, but then was told Shepherd’s Pie is English, not Irish. At least it’s part of the British Isles . . .
Emma made the Irish Soda Bread herself and was quite proud of it, even though part of the dough snuck out of the crust (we’re still trying to acclimate to our ‘cooker’ and its temperament).

To round out our St. Patty’s Day, Emma decided to take a break from her normal writing assignments and write something fitting for the holiday . . .
The Leprechaun
The Leprechaun, so nimble and quick,
As skinny as a fiddle stick,
Climbs up the rainbow now.
Falling back down, down, down,
Poor Leprechaun, so sad and mad.
Up the Leprechaun goes,
One last try will not cost him a nose.
Oh yeah! The Leprechaun made it!
Oh, Leprechaun, so happy and gay,
Sing a tune, don’t stay away.
